Peru is very vegetarian friendly. Almost all the touristy restaurants I went to had a vegetarian option, and if all else fails you can always fall back on papas fritas. The quality of the produce is really impressive as well. The tomatoes are soft and red and there are all kinds of olives, beans, corn, avocados, quinoa, and other veggies. Our tour guide said that there are over 2,000 kinds of potatoes. I tried some great dishes like a vegetable stuffed avocado, a bean/corn/cheese/olive/potato salad (pictured above), and an amazing tortilla type potato and egg dish.
